Quick and Tasty Breakfast Sandwiches

Getting in a good, balanced breakfast can be difficult when you're always running around. Often times us moms end up grabbing something quick or eating whatever we fix for our kids. These meals tend to be lower in protein and healthy fats, and higher in refined carbohydrates and sugar. That's not exactly a winning combination when it comes to balancing blood sugar and having energy for a busy morning.

When I was pregnant with the twins, I had to eat more protein than I was used to having in order to grow two healthy babies. I'm normally an oatmeal girl, and while oatmeal is great for fiber and does have some protein, it wasn't nearly enough to get me to my goal. The book I read on expecting multiples suggested eating 2 Egg McMuffin sandwiches every morning. Yes, 2 Egg McMuffins a day! As tempting as it was for a dietitian to be hitting the McDonalds drive through each morning, I knew I could make a healthier version at home.

For a homemade version, you can use whole wheat bagels, English muffins, toast, or a whole wheat wrap. Then add some protein like an egg or two, some smoked salmon, or turkey sausage, then add some fat like avocado slices or a slice of your favorite cheese. Finish with some veggies like spinach, tomatoes, peppers, or onion, and you have a tasty, balanced, and healthy breakfast sandwich. For a ready to go version, scramble the veggies with the egg, then assemble the sandwiches and and store in a freezer safe container. A minute in the microwave and you're good to go!
